Biscuit Mix Puts Magic In Casserole

DEAR JEANNE: Here is a recipe for a zucchini casserole that seems much too high in fat and cholesterol. Can you help reduce these levels?

ZUCCHINI CASSEROLE
3 cups thinly sliced zucchini
1 medium onion, chopped
1/2 cup oil
Grated Parmesan cheese
1 cup biscuit mix
4 eggs
Minced garlic
Combine zucchini, onion, oil, 1/2 cup Parmesan cheese, biscuit mix, eggs and garlic to taste. Place in 11x7-inch or 9-inch square greased baking dish. Top with sprinkling of Parmesan cheese. Bake at 350 degrees 30 minutes. Makes 4 to 6 servings.
DEAR HARVEY: Here is a good example of what a little “magic” can do for a recipe. In this case the magic is found in my Magic Biscuit Mix.
I was able to reduce the added fat considerably by using less oil and by replacing the eggs with liquid egg substitute.
I recommend using freshly grated Parmesan cheese for the best possible flavor, which is important since the cheese is a big source of the calories, cholesterol and sodium in this recipe.

MAGIC ZUCCHINI CASSEROLE
3 cups zucchini, thinly sliced
1 medium onion, chopped
2 tablespoons corn oil
1/2 cup plus 1 tablespoon grated Parmesan cheese
1 cup Magic Biscuit Mix
1 cup liquid egg substitute or 2 eggs and 3 egg whites, lightly beaten
1 clove garlic, minced
Spray 7x11-inch or 9-inch square baking dish with non-stick vegetable spray. Combine zucchini, onion, oil, 1/2 cup Parmesan cheese, Magic Biscuit Mix, egg substitute and garlic and pour into baking dish.
Sprinkle with remaining 1 tablespoon Parmesan cheese and bake at 350 degrees 30 to 40 minutes or until top is golden brown. Makes 6 servings.
Magic Biscuit Mix
3 cups calcium-enriched all-purpose or unbleached flour
1/2 cup instant nonfat dry milk powder
2 tablespoons baking powder
3/4 teaspoon salt
1/3 cup corn oil
Combine flour, milk powder, baking powder and salt in food processor fitted with metal blade or with electric mixer. Slowly pour in oil with machine running.
Scrape sides of bowl with rubber spatula. Mix thoroughly again. Store in cool place in tightly covered container. Makes 5 cups loosely packed mix.
Note: Use exactly as any commercial biscuit mix.
